local restaurant owner Paul Heathcote has appeared on BBC Two in the third programme of the series “Servant”, hosted by Michel Roux.
In the new series, Michel is on a personal mission to train eight young people into becoming great waiters and front of house superstars, which involves discipline, care for others and self-confidence.
Trainees visited Paul Heathcote’s, restaurant London Road, an upmarket brasserie in the footballers’ wives paradise of Alderley Edge in Cheshire.
The trainees were asked to look after a group of ladies who lunch in a private dining room at the restaurant while Paul and Michel watched on monitors from another room. The group were then asked to make one couple’s day very special, performing service on their wedding day and finally they returned to Paul’s brassiere where they performed all the various duties.
Since the series was filmed Paul has sold that particular business to concentrate on his Clitheroe and Longridge outlets, but said: “It is always good to work with Michel, he is such a great professional – normally it is in a chef’s capacity when we meet up. It is about time that front of house staff got recognised, for anyone who has ever worked behind a bar or as waiter/waitress, they would know how hard a job it can be. It was great to be involved.”
